Tomato Onion Cheese Casserole

 4 T. melted butter

1 clove garlic, optional (Gram Linda leaves it out)

3-4 T. flour

1 t. sugar

1/2 t. salt

3/4 cup milk

1/8 t. each oregano and basil

2 lb. canned tomatoes, drained and coarsely chopped

1 small jar (7 oz) pearl onions (Gram Linda uses Aunt Nellie's Whole Holland Style Onions)

3/4 cup cheddar cheese, shredded - plus more for on top

Saute garlic in butter until soft. Add flour, sugar, and salt. Mix well. Add milk and whisk until smooth. Stir in seasonings, tomatoes, onions, and cheese. Pour into a buttered baking dish. Sprinkle with additional cheese. Bake at 350 degrees for 50 minutes.

*For Thanksgiving, make a day ahead. Reheats well.

Cranberry Relish

1 unpeeled orange, cut and seeded
1 12 oz. package cranberries, rinsed and drained
3/4 cup honey (or sugar)

Process orange and cranberries in food processor until evenly chopped. Transfer to bowl and mix in honey (or sugar). Refrigerate.

For Thanksgiving, make ahead and store in refrigerator.

Pumpkin Pie

1 15 oz. can pumpkin
2 eggs, slightly beaten
1 cup sugar
1/2 t. salt
1/2 t. ginger
1/2 t. nutmeg
1/4 t. cloves, optional
2 t. cinnamon
1 can evaporated milk
1 9 inch pie shell

Mix ingredients in order given. Pour filling into pie shell. Bake at 425 for 15 minutes. Reduce temperature to 350 and continue baking for another 45 minutes or until knife inserted in center comes out clean. Cool on rack then place in refrigerator to chill.



From Aldi Pumpkin can

Easy Double Pie Crust

2 cups flour
1/2 t. salt
2/3 cup shortening
6-7 T. cold water

Stir together flour and salt. Cut in shortening with pastry blender. Sprinkle water into flour 1 T. at a time using fork to moisten dough after each addition. Use just enough water to form a ball. Divide dough into 2 equal balls. Roll out to ~12 inch circle on lightly floured surface. Use rolling pin to transfer dough to pie plate. Trim dough to fit. Repeat with second piece of dough. Use to make 2 single crust pies or one double crust pie. Bake as directed in pie recipe.

Bread Machine Cinnamon Rolls

Dough:
1 cup warm milk
3 T. oil
1 egg + 2 egg whites, lightly beaten
1/2 cup sugar
4 cups flour (more if needed)
1 t. salt
3 t. yeast

Filling:
2 T. butter, super soft
2/3 cup brown sugar mixed with 1 T. cinnamon

Icing:
4 T. butter, softened
1 t. vanilla
1 1/2 cup powdered sugar
1 - 2 t. milk

Put all the dough ingredients in the bread machine in the order listed. Set on dough cycle and run. When done roll dough into large rectangle (~12x18 inches). Spread with 2 T. super soft butter. Sprinkle on the brown sugar and cinnamon mix. Roll, length-wise. Use dental floss to cut into 18 rolls. Divide rolls into two greased round cake pans. Bake at 350 for about 20 minutes or until nicely browned. Spread on icing as soon as they come out of the oven.

Make ahead and put rolls in fridge covered with plastic wrap until ready to bake.

Pumpkin Bread

Combine in bowl:
4 1/2 cups flour
2 t. baking soda
1 t. salt
1 T. pumpkin pie spice (or 1/2 T. cinnamon, 1/4 T. ginger, 1/8 T. cloves, 1/8 T. nutmeg)

Mix well and set aside.

Combine in LARGE bowl:
4 eggs, beaten
4 cups sugar
1 cup oil
1 16 oz. can pumpkin

Beat until well mixed then add flour mixture and stir until just moistened. Do not over mix. Divide batter evenly between THREE greased loaf pans. Bake on middle rack at 350 for about 1 hour or until a sharp knife inserted in center comes out clean. Rearrange pans at after about 30 minutes of baking time. Remove and cool on rack. Wrap in foil and refrigerate. Best eaten the next day.

Makes three 9-inch loaf pans.

Creamed Spinach Dish

~20 oz. frozen, chopped spinach (from bag or box)
16 oz. sour cream
4 t. beef bouillon
8 t. dried onion
1 t. onion powder
1/4 t. pepper
1 cup shredded, cheddar cheese

Drain spinach well. Mix spinach with sour cream and spices. Spoon into greased casserole dish. Top with shredded cheese. Bake at 350 for about 25 minutes or until heated through.

For Thanksgiving, make ahead and put in fridge.

White Dinner Rolls

2 cups warm water
6 cups flour
4 T. dry milk
7 T. sugar
2 t. salt
6 T. butter,
4 t. yeast

In Bosch mixer...
1. Mix water, sugar, and yeast. Let sit 5 minutes
2. Add salt, milk, butter and mix.
3. Add 2 cups flour and mix for 2 minutes
4. Add remaining flour one cup at a time.
5. Knead 7 minutes
6. Move dough to greased bowl and let rise until double (60-90 minutes).
7. Shape dough into preferred roll shape.
8. Rise again until almost doubled.
9. Back at 350 for 15-20 minutes or until golden brown.

Makes 32 (1.5 oz) rolls.

Original recipe was half of this in the bread machine.

Sweet Potatoes

6 large sweet potatoes
1/2 cup heavy cream (or milk)
4 T. butter
2 T. molasses
1/4 t. nutmeg
1/4 t. cinnamon
1 t. salt
1/2 t. black pepper

Scrub potatoes, prick several times with a knife, and bake on lined baking sheet for 1 hour or until very soft. Remove from oven and scoop out insides as soon as they are cool enough to handle. Place potatoes into bowl and mix in all other ingredients. Transfer to baking dish. Bake for 20-30 min or until heated through.

For Thanksgiving, make ahead and put in fridge.

Twice Baked Mashed Cauliflower

1 large head cauliflower
4 oz. cream cheese
1/2 cup sour cream
1/4 cup parmesan cheese
1 cup cheddar cheese, for topping

Optional add ins:
1/4 c. bacon pieces
1/4 c. chives or green onions
Frank's Hot Sauce

Cut head of cauliflower into florets and steam (in microwave) until really tender. Drain well. Put in food processor with other ingredients and puree until smooth. Stir in any optional add ins. Put into a casserole dish, top with cheddar cheese, and cook at 350 for 25 minutes or until hot and bubbly.

Crockpot Brisket

4-5 lb brisket
2 T. yellow mustard 
3-4 T. Worchestershire sauce
2 tsp. Montreal steak seasoning
1/4 - 1/2 cup beef broth
2 T. dry onion

Smear both sides of brisket with mustard and season with Montreal Steak seasoning. Put into crockpot fat side up. Add broth, worchestershire, and dry onion. Let sit overnight. The next day cook on high 5 hours and low 2 hours. (Or high 6 and low 1.)

Low Carb Crispy Chicken

6 chicken breasts
1/2 cup mayo
2 cups pork rinds, crushed fine
1 t. Italian seasoning

Preheat oven to 350. Grease or line shallow baking dish. Mix pork rinds and seasoning in small container. Coat chicken with mayo and dredge in pork rind mixture. Place chicken in pan and cook for 30 min or until juices run clear.

Optional - Bake elevated on rack if you want it extra crispy.

Cheeseburger Cabbage Skillet

1/2 head of cabbage, sliced thin
1/4 cup water or chicken broth
1 lbs. ground beef
1/2 T. mustard
3/4 t. salt
1/2 t. garlic powder
1/2 t. onion powder
1/2 T. chili powder
1/2 t. black pepper
1/4 c. heavy cream
1/2 c. mayonnaise 
1-2 cups shredded cheddar or Colby jack cheese

Brown ground beef (or use pre-browned). Mix with seasonings and mustard, set aside. Combine mayo and cream, set aside. Heat broth in large skillet. Add sliced cabbage and cook until desired tenderness. Remove any remaining liquid. Top with ground beef mixture, cream mixture, and cheese. Cover and let heat through, about 5-10 min.

Green Chicken

2-3 lbs. boneless, skinless chicken
1 can green chiles
1 jar Salsa Verde (Herdez)
8 oz. cream cheese
seasonings of your choice: onion powder, garlic powder, cumin, cayenne, and pepper to sprinkle on chicken.

Place all ingredients in the crockpot on low for 6 hours or high for 4 hours. 

Optional: If you want, wait to put in the cream cheese for the last hour.

California Barbacoa Beef

4 lb. brisket or beef chuck roast
2 T. oil
3-4 chipotle chilis in adobo
1 1/4 cup beef broth
4 t. minced garlic
1 1/2 T. cumin
1 T. oregano
3/4 t. salt
1/2 t. pepper
1/4 t. cloves
1/4 cup fresh lime juice

Cut beef into large cubes. Sear beef in oil over medium high heat. Transfer meat to crockpot. Put the rest of the ingredients into food processor and pulse until blended. Pour on meat. Cook on low for 8-9 hours or high for 6 hours. Shred meat and keep on warm until ready to serve.

Notes:
You can skip the searing and it is still good.
You can just put the spice/liquid ingredients into the crockpot without blending.
First made this during a trip to California in 2018.

Yummy Fruit Dip

1 jar marshmallow creme
1 (8 oz) cream cheese, softened or small vanilla yogurt
1 t. nutmeg
1/4 t. grated orange peel, optional

Mix all ingredients well. Refrigerate. Serve with fresh fruit.

Eli's Ribs

2 racks baby back ribs
1 bottle of your favorite BBQ sauce
1/2 cup brown sugar
1 t. cumin
1 t. chili powder
1 t. garlic powder
1 t. onion powder
1 t. kosher salt
1/4 t. black pepper

Combine all dry ingredients in a small bowl. Sprinkle spice rub over front and back of ribs. Gently rub it in. Wrap ribs in heavy duty foil and place on baking sheet with rim. Let sit for at least 30 minutes (or up to 24 hours in the refrigerator). Bake at 300 for 1.5 hours. Open the foil packets and brush on bbq sauce. Turn heat up to 350 and cook an additional 30 minutes.

Normal Burgers

2 pounds ground beef
2 T. Worcestershire sauce
1 T. dijon mustard
1 t. salt
1 t. pepper
1 t. garlic powder (plus a bit of minced, if desired)
1/4 t. cayenne pepper

Form into 8 patties. Grill until cooked through. Top with usual toppings.

Baked Oatmeal

1 cup oil
1 1/2 cups sugar
4 eggs
6 cups oats
4 t. baking powder
1 t. salt
1 t. cinnamon
2 cups milk

Combine all ingredients in the order listed. Pour into greased 9x13 pan. Bake at 375 for 30-40 minutes or until lightly browned. 

Topping suggestions:
butter
brown sugar
milk
chocolate chips
mini marshmallows

10x15 Baking Pan Measurements:
1.5 cup oil
2 1/4 cup sugar
6 eggs
9 cups oats
6 t. baking powder
1.5 t. salt
1.5 t. cinnamon
3 cups milk

Homemade Gatorade

Mix until dissolved: 
1/2 cup hot water
1/2 t. salt
2 1/2 T. sugar
1 t. jello or gelatin powder, any flavor
pinch of NuSalt salt alternative (for potassium)

Add:
3 1/3 cups cool water

Chill and serve.
